Blueberry French Toast

12 white bread slices with crusts trimmed

2 – 8 oz. of cream cheese

1 cup of blueberries

12 eggs

2 cups milk

1/3 cup maple syrup or honey

 

Cut bread into 1” cubes, place half in greased 9 x13 pan.  Cut cheese into 1” cubes and place over bread.  Top with blueberries and remaining bread.  Mix eggs, milk, and syrup. Pour over bread, cover and chill overnight.

 

Preheat oven to 350F.  Bake covered 30 - 45 mins.  Uncover and bake another 30 mins. until brown and set.  Serve with sauce.  Yields 6 to 8 servings.

Blueberry Sauce Recipe

1 cup of sugar

2 tablespoons of cornstarch

1 cup of water

1 cup of blueberries

1 tablespoon of butter
